Responsibilities

The Casino Beverage Manager provides direct and general supervision to beverage team members in order to ensure effective and efficient operation of all beverage operations.  The Casino Beverage Manager ensures compliance with all policies and procedures while supporting Hard Rock’s vision, mission and values, and maintains the integrity of all beverage operations.

 

PRIMARY RESPONSIBILITIES

  • Hires, motivates, evaluates and supervises beverage staff in order to ensure team members receive adequate guidance and resources to accomplish established objectives.
  • Responsible for morale of staff through quality of supervision and training and provides training for all assigned outlet personnel to ensure guest service standards are met, and guest needs are responded to urgently and appropriately.
  • Establishes department standards, guidelines and objectives and maintains other administrative processes, such as budget and staffing to ensure proper planning and efficient operation of the outlet.
  • Develops and maintains an intricate knowledge of Casino Beverage performance by monitoring guest satisfaction, volume, cost, marketing promotions and competitors’ programs in order to implement necessary and innovative changes to ensure Hard Rock Tejon offer superior product and service.
  • Works with the Director of Food & Beverage to analyze beverage cost and forecast business trends in order to make recommendations for revision of prices and staffing levels that will most appropriately meet company needs by way of budgets, labor schedules, and other systems of accountability.
  • Monitors and evaluates the performance of Food & Beverage service by observing operations, surveying guests and coordinating with team members in order to develop strategies for proper planning and ongoing improvement of guest services and financial return.
  • Responsible for ordering and maintaining accurate inventory levels of all beverage products and supplies. 
  • Conducts inspections of front-of-the-house areas to ensure compliance with procedures, security of company assets, and guest and team member safety. Supervises floor service during peak hours to ensure staffing effectiveness, rotation, drink service, supervision of staff, and overall product quality.
  • Investigates and resolves guest complaints in order to maintain positive guest relations.
  • Develops and implements departmental guidelines in regards to order guides, checklists, and standards.
  • Researches and recommends to Director of Food & Beverage positive changes and/or adjustments to menu offerings, service, portion control, presentation, waste and pricing.
  • Exercises cost control by way of maintenance of dispensing systems, portion controls, P&L statements, and general business practices of the beverage department.
  • Attends and participates in meetings, completing follow-up as assigned.
  • Perform work regularly and predictably.
  • Other duties as assigned.

Qualifications

  • These knowledge and these abilities are typically acquired through the completion of a Bachelor’s Degree in Business Management or related field, and 5 years’ experience directly related to Food & Beverage; or an equivalent combination of training, education and experience.
  • An Associate’s Degree preferred.
  • Advanced knowledge of Excel.

PHYSICAL DEMANDS

Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.
  • The Casino environment is hectic, fast-paced and often crowded and noisy. May be exposed to casino related environmental factors including, but not limited to excessive noise and constant exposure to general public.
